Carrot & Coriander Soup

The other day I was in Asda in the fresh veg bit and noticed they had fresh veg soup mixes. The directions said you just needed to add stock. A 600g pack was £1 so I thought I;d give it a go :)

I decided to add a bit of chicken and brown rice to mine so make it a bit more substantial, and some mushrooms.

Uncle Ben's Wholegrain rice, Oxo chicken stock cubes, Mixed herbs, garlic, Asda Carrot & Coriander Soup mix, mushrooms, and 150g chicken fillet.

First I put the soup mixed, chopped chicken fillet, garlic and herbs and chopped mushrooms into a pan on a medium heat for 5 mins.

Then I added 1.5 litres of chicken stock and left it to simmer for 20mins.

Then I added the rice and turned the heat off, leaving it to stew through for 5 minutes.

Looks like I should have added either less rice or more stock, cause the rice absorbed it! More like a stew now.. but this made 5 portions which I worked out at approx 200 calories each, low fat and salt :-)
